Rolling Blackouts Coastal Fever.

2018 Last Discovering. 

I always try to look for new music to refresh my playlist and make every year different, plus i have discovered new bands, tracks and records this 2018 and i thought i had listened to all the music i was destined to discover.

But a few days, me and my family got to gather with some Belgian friends, we enjoy to talk about many things and the few times that we have seen each other we try to spend it the most we can, so one of these days of December we had a stroll over Mexico City downtown and our friend told me, before we split to our respective homes, "You should listen to Rolling Blackouts, they have an incredible sound and they're brand new, almost brand new, they released their first record this year, you're gonna like it".



Knowing my mate has a good music taste (he lived the best moment of punk, rock and alternative music in its glory and mere explosion), i was very excited to know what was and how this band he had the kindness to recommend me.

So, i purchased their debut album, Hope Downs and intermediately i felt an amazing pitch, an electricity that i only feel in music that really matters.

Rolling Blackouts Coastal Fever is a band from Melbourne, Australia. formed by five lads that totally knows how to create good vibrations and risky and meaningful lyrics, since 2013 they have released several singles and Extended Plays, the most relevant being Talk Tight (2016) and The French Press (2017). This year they released a beautiful debut album but we will talk about it later.

I'm gonna review in small words why Rolling Blackouts it's the band you shall be listening right now.

As off i listened to Hope Downs i wanted to know more about the band's previous releases, so i listened to their most relevant extended plays to get a bit familiar with them.

Talk Tight is the kind of music you could find in a typical independent movie, with the guitars being played slowly and with rhythm. What you listen is a huge endeavour of freedom, the wind runs through your hair and makes it whirl. The single that comes out of this EP is called Write Back and it's worthy of you playlist because of it's impact, a soul with the big desire to fly.



The French Press is more directed to alternative rock itself, more sound coming from a guitar and the voice makes it sounds like a real and mature rock band, out of nowhere this lads take the line of composition very serious, their best weapon is the ambitious set of tracks on it, being Colours Run and Julie's Place the best ones.



And for their Debut album, Hope Downs i can only say, this record is for those sunny days and summer nights we love to death, in general the whole discography of Rolling Blackouts C.F. is a Spring/Summer hit, i can describe their sound like fresh grass, Sunny days and cold drinks. Besides this i can tell Rolling Blackouts are gonna sound everywhere and play in the best festivals, they signed with SUB POP records so... it's a guaranty.

I recommend you to listen the full album to feel every track as a small piece of a story, that way you'll enjoy it even more.



My lesson on this band is that, we have to discover more than we already did during the year, maybe look forward instead of looking back on the past, bands like Rolling Blackouts shall rule the new rock era for good.

Mezcal Diablo Turkey & Patate Al Forno. 

Let the devil bite your fingers and tongue. 

Me lads! i have a great recipe to share. I decided to experiment again with mezcal while cooking and the result is incredible. I call it, Mezcal Diablo Turkey, but here's a surprise, a patate al forno a side of this pleasant turkey.

What you'll need:

- 1 Kg of sliced smokey turkey
- 2 Fingers of mezcal
- 4 Dried chilli peppers
- Half orange (to make juice)

For the Patate:
- 3 Big potatoes (previously sliced and boiled)
- Fine Herbs
- 1/2 tsp pepper
- A pitch of salt
- 1 Tbsp of olive oil

Do not add oil on the pan, the main turkey's fat is enough to roast it, sliced and ready on the hot pan, squish the orange and take all of its juice over the turkey, let it rest, add salt and pepper, get ready for the mezcal shot, two fingers on the glass, spread it, wait until the mezcal gets steamy, the turkey will absorb the taste and mostly... the alcohol, now very carefully crack the dried peppers and spread over the turkey, mix, the turkey must be roasted, once the pan gets dry means it's ready to be served.

For the Patate, once the potatoes are sliced and boiled, get a bowl, add olive oil (two tbsp), pepper, salt and fine herbs, place the sliced potatoes on this mixture, bake.

And that easy you have a roasted turkey with spicy taste and a side of good Italian style potatoes.

Don't waste time and try it at home, remember, one shot for the turkey and two for the chef ;)

Burning House: Mirror Song

Last month we got the news that Burning House (Yes, the British band you shall be listening, right now) is about to release their first ever album next year, so to make it exciting they launched a new single called Mirror Song. Today we were so lucky to watch the video for their newest single. 



This song and video reflect the influence of The Jesus And Mary Chain and of course, My Bloody Valentine, a smooth, sweet and at the same time explosive track with some colour lights. 

A good presence from the band, performing this song and showing how ready they are to kill a rock show, shoegaze, guitargaze, everything happens while Mirror Song hit the top of our playlist. So go ahead and enjoy an incredible look into the mirror.   

Besides, this single and video is the perfect match for the Autumn/Winter season but also with a great sound ready to jump into 2019.

TOP 10: The best Indie albums. 

2018
And... 2018 is saying By-bye, but this year (in my point of view) has been one the most incredible years for music, yes, we see how other genres catch more and more attention and how music festivals have turned into big parties with DJ's. But music stands and so we have a Top 10 for this amazing year, we review some of the most relevant indie music releases for you, here at Le Mexicain

10: Superchunk - What A Time To Be Alive
We truly believe this album has everything for those spring afternoons and it came perfectly to score our holidays and to place an old sound into Superchunk's career. This album reflects joy, passion and of course a nostalgic feeling about how music was done in the mere old days. Being their eleventh studio album the band seems more mature, not pretending to fit with the new age music tendencies. If i'm right, Superchunk will stand for a long time if they show up more of these kind of tracks present throughout What A Time To Be Alive. 



9: No Age - Snares Like A Haircut
No Age has come to set a record full of noise-rock sounds balancing them into some pop and experimental stuff, these guys never disappoint, they give a fresh air breath with every album they launch. Is difficult to release a fourth studio album but when you have set your own style and sound and dare to experiment without taking that order you create more than just a good record. Snares Like A Haircut is maybe the No Age's Nevermind .




8: Datarock - Face The Brutality 
Datarock decided to come back and try some new stuff, the Norwegian band put on red track suits and dare to fight for their destiny against... brutality? yes, Face The Brutality is a master piece of rock music made with computers in this case replace computers with Synths, the album came with its first single "Everything" and it completely rushed media's radar. The synth rock sound with bases of punk and madchester goes perfect with a dose of humour, brutality and red colour track suits.



7: Fucked Up - Dose Your Dreams 
Talking as a Fucked Up fan, i have always loved the way the band tells a story, now they created a whole new drama to their well-known stories universe, about the dis-topic overuse of internet. Fucked Up decided to experiment with different stuff now, adding saxophone, string arrangement and other instruments with the intention to make a unique and completely different album from their past glories, nevertheless that hardcore spirit is still here and it breaks any kind of barrier. Dose Your Dreams is the next level and the Screamadelica of our generation.



6: Nine Inch Nails - Bad Witch 
Some of you may say "but this is an EP, not an album", well lads, i have to tell ya, this is a whole album. Trent Reznor created a magnificent trilogy a few years ago (2016) and Bad Witch is the final stone of this Cold And Black And Infinite temple. Following the success and experimental journey made throughout Add Violence, Bad Witch comes with a whole new package of drum and bass atmospheres, experimental jazz sounds and dark, heavy and oppressive industrial style.

I know y'all gonna say that sax experiment was too much, Trent Reznor gives zero fucks about what we say against that sax, he and Atticus Ross created one of the best Industrial albums of all the time.



5: Kate Nash - Yesterday Was Forever 
The British iconic singer had a great 2018, a side of her acting career, she took the way to create new record, full of pop music and stories coming from her own heart, Kate's album crossed the line between being a star and being an icon, turning music into a journey of emotions and vivid experiences, because maybe yes, Yesterday was Tomorrow but still lives Forever.



4: Arctic Monkeys - Tranquillity Base Hotel & Casino 
Yes, i know we bad reviewed this record in its time, but after a few moths, we have to take it seriously, Alex Turner just jumped out of a cage and started a whole new universe around his thoughts, we cannot dismiss that this record has split opinions (mine for example) but it was necessary to add something risky on the Arctic Monkeys sound. That's the answer to "Surprise us" and yes, the Sheffield lads completely did it with a smooth piano, light guitars and a more satisfying playground than their previous album.



3: DZ Deathrays - Bloody Lovely 
being a young band has its struggles and demands strength and perseverance, but this guys from Australia have survived for over ten years and the have shown a magnificent style, ready to score a party or a great movie. This year they released Bloody Lovely early this year with an explosive dance-punk sound. Now this is the kind of risks that matters because coming from far away and with such a difficult sound to expose, the band deserves this place on this list, not only because their music is a great view on young lads and young bands, because they have fought to get to the top.



2: Gouge Away - Burnt Sugar 
You know this space is almost dedicated to punk rock music and other ventures, so why not placing such album to the top? Gouge Away is a band with a chaotic and totally hardcore sound, this album, Burnt Sugar has a faster and aggressive direction, we like to hear bands like this destroying all kind of tendencies and creating new stuff full of anger. Don't be afraid to burn some sugar on the pan.



1: Moaning - Moaning 
Believe us when we say "This is the band you shall be listening right now" because Moaning is the band you shall be listening right now. A few info about the band is available, but early this year they released an album that matters, and matters in the fact that they have deconstructed music to create this album, i always have said that their sound is a mix between Nirvana's In Utero and Joy Division's Unknown Pleasure. Some darkness is inside their music but also some melancholy, besides the noisy guitar sound and the synths, this record reflects a desperate desire of love and pain.




So this was our Top 10: 2018, we hope you like it and if you have some suggestions please send em to us and we will consider a B-side Top 10 2018 Edition. Also we hope you have had a great year and if you want to taste some of these records, don't have a second doubt, try em all. We will be here, somewhere getting the best of music for you.

Буерак


A Russian sweet darkness from Novosbirisk. 

Is curious to talk about Буерак (Gully), not many Russian bands are highly listened in this side of the pond, but fortunately the internet is making the difference for these talented musicians. 

Буерак has a dark sound balancing it between the darkwave and dream pop, more close to the post-punk sound, i imagine these lads tried to emulate Joy Division or Bauhaus when they decided to set the band together. 

The first album i listened was Скромные Апартаменты (Modest Apartments) and i got hooked by its sweet sound reminding me a bit The Smiths' style, also i got curiosity by the fact that they sing in their mother tongue, Russian language is a bit hard if you are not into the Cyrillic alphabet, but i believe this lads can get you into the language once you start to listen to them. 



Скромные Апартаменты reflects the Russian life style, cold weather and dark atmospheres, Буерак could become one of the biggest indie bands in a near future if we pay enough attention to them, they have a bast selection of records, it's amazing how these lads have been playing since 2014!

The kind of place Буерак came from and sing about.


I'm gonna let you get in the mood of these Russian lads and hope you like them as i do, they have a pure, fresh new face for the modern age of rock music.

Pumpkin Pie: Recipe 

For Samhain. 

I know it's too late to post this recipe, but i want to share it with you because this year Samhain has brought to my family some good stuff besides the reminds of our loved ones who passed away the last year.

So for this recipe and as being a tradition at home we have changed the recipe constantly since 2010, now this Pumpkin Pie has many ingredients and a new crust, we used to made the crust out of butter and cookies, but now we have a better crust.

What you need for the crust is:
-250 gr All purpose flour
-150 gr Butter
-100 gr Powdered sugar
-1 Egg
-1 Pitch of salt
1- Tsp Vanilla

Mix all of these ingredients til' you get a dough , place some oil in the baking pan before setting the crust, bake for about 20 minutes at 150 Celsius degrees. 

For the Pie you will need:
-1 Kg Pumpkin (previously boiled)
-2 Eggs
-1/2 Cup of Table Cream 
-1 can Condensed Milk (to avoid adding sugar)
-1 Tsp Ginger
-1/4 Tsp Cinnamon
-1/8 Tsp Clove
-1/4 Tsp Shredded Nutmeg (I prefer to shred the nutmeg directly before blending)
-1 Tsp Vanilla

So, place all these ingredients into a blender, i like to break the eggs in a different place to make sure we do not have a rotten egg among us and avoid damaging the mix. After mixing all ingredients, take the crust out of the oven and place the mix over, make sure the mix covers 3/4 parts of the crust and then, bake at 150 Celsius degrees for about 40 minutes. 

Place in a dish and you'll get the most delicious Pumpkin pie to haunt your house and offer to the Gods of Samhain.

The Product. 
So as being a Samhain (All Hallows Eve) dessert I give you a song that will stick together with this pie.

Telephone Exchange

A User Manual for a dis-topic age.

Hello, my beloved lads, i have been absent for a while but from now i'll be yours truly to discover new stuff. and saying this i have something new for all of ye. 

As you know my friend Cesar Saldivar has a project called Telephone Exchange, well, now he has released his brand new single called User Manual, i have to say this single is much more friendly and special than the previous first single, but it's cuz this single is shorter, of course it has that krautrock, now Telephone Exchange has placed a spoken word speech, in words of Cesar this song 

"Is about a machine reading out loud his own operation manual, with a few recommendations about how to work on the actual labour schemes.



With a few references on the music side of the song about Phil Spector's Wall of Sound, the dehumanisation of the human being turning into machines everyday and the nostalgic way to record music, User Manual comes with a "Sunday evening" effect to us, the sound of guitars and drums hit really hard on our mood and the bass (very present) moves all our sensations to the core, the voice. 

With this pack of emotions User Manual comes to bring peace, fill the air with a nostalgic sound. 

In Addition to the promotion, Telephone Exchange is planning a set of live dates for the next year, Cesar has gathered some pals from the prominent indie scene in Mexico City. Plus the album is about to be launched on January 5th, 2019, we have just a few months to pre-order this master piece of avant-garde sounds. 



The release will feature a vast number of surprises and there will be many different and special editions for collectors, a digital and vinyl edition produced by Cesar's own recording  El Cochinero Record and Ongakubaka Recrods in USA and some special editions in cassete edited by the Monterrey (Mexico) label Cintas, these editions will feature a stereo mix and a super mono mix ready to be listened with total headphones.

Telephone Exchange

Learning from the machines.

welcome once again to this, your space to discover new music and experiences, a few days we had the pleasure to interview our friend Cesar Saldivar from Telephone Exchange and he told us about his up-coming album, a new release coming in October and a few details about the recording process, the project itself, El Cochinero (his home recording studio) and his own persona. 

1.- You have kept us posted about your new project lately (something we thank by the way) So, what could you tell us about Telephone Exchange, what is it? What does it involves? And How it started?
Telephone Exchange begun as a side project, I still had a band and just had left Aguascalientes looking for a job (and I found a job… and heaven knows I’m miserable now…). I went to London, where all the computational design happens (that’s what I do for a living). One day I was walking somewhere in Seven Sisters and found an old building which was called “Telephone Exchange”. I came up with the idea of making a personal music project where I could convey the feeling, and all the experiences I went through at different places where I had been to; just like the old telephone exchanges, where operators connected cables in a patch bay to communicate different places and people. I had some recording gear in my flat over there and started working on ideas (some of them are part of my new album). I didn’t get a job in London; I was in the middle of the whole Brexit thing, and getting a visa was really tough by then; but I got a nice job offer in Mexico City, so I came back. Just after a few months, this “modern life” reality hit me up, so, Telephone Exchange transformed into that, a project where I could explore the daily intricacies of modern life. This project had a rough start. I didn’t have a place where to set up the whole recording studio I had back home, it just went one year that way. But it was not that bad at all, since throughout all that time I basically wrote the whole album and did some pre – production. Eventually I got a bigger flat, and finally brought almost the whole studio. It took me one year to record the album (just six tacks lol!), but I think it was alright, this allowed me to analyze a little bit better the concept I was working on. Working at an office became some sort of field trip in order to understand better the object and subject of study.



2.- As off we heard your brand new single this year, Machine Learning, What do you feel about it as a single? What’s behind those eleven minutes of music? And what were you doing during the time you compose it?
I really like it, it’s one of my favourite songs of the album for many reasons. It’s the last track of Maschinelles Lernen. This track is basically the conclusion or “epitaph” of the whole album (Yes, it is a conceptual album, sort of). The track pretends to be sung by a machine (you can tell by the processed vocal track). This artifact acquires machine learning skills, and is eventually able to discern between performing a determinate task simply by request, and thinking and meditating about the purpose of it all; this thinking is sort of transposed into the workforce components of modern life. The album tries to “humanise” the general aspects of a machine, and makes us reflect about the ethical and ontological aspects of simply performing a task by request.

What was I doing? My roommate was having a cocktail party and I wasn’t invited haha, but I had had a really bad day, and was pissed off about all I was asked to do, and was thinking as above.

3.- One of the first statements you told to us was that you will release your debut album very soon (not so soon) Machinelles Lernen, what are the elements and aspects you can tell us about in this recording? How did the Lo-Fi sound match with your ideas?
The whole album was recorded on a 4 track cassette recorder. there was so much fun, since I had to do a lot of bouncing (record 3 tracks, and pass them to an empty track, so I have 3 more available tracks). Part of the lo – fi sound is due to that. Also to the fact that I was kind of looking for a Velvet Uderground’s White Light/White Heat sound; so I recorded the whole thing at hi – gain levels. On tape this sounds really good, recording on tape is very different than in a digital fashion, since first, I think you get a more realistic sound, more organic and dynamic; and second, you don’t have too many options in means of editing. This forces you to become a better performer, and I think this is the real basis of making a good record, rather than relying on expensive microphones, outboard gear or studio tricks such as compression (didn’t use much compression during the tracking by the way). Classic records from the 50’s and 60’s were made using less gear than any average musician has in its home studio or home.

4.- How exciting was to track it with an analogue format and how was the recording process?
It was great, since I was putting in practice what I just had been studying for a while. It was exciting to pay attention to details, to nuances, to slight mistakes. I really enjoyed recording it in analogue format, also, because it was the first time I do this, and by my own, engineered by myself.
The recording sessions were basically Saturdays and mostly Sundays. I brought some drinks into the studio, and just recorded until I had ear fatigue (or got really drunk) and thought that I just shit that session. The next morning I would listen to what I recorded and then it was a few days of analysing the tracks and finally I just left it like that since it sounded good. Ear fatigue was a common problem in this recording process, but I guess it was due that I was so excited on recording, and also, because I wanted to finish the whole album and listen to it from start to beginning.




5.- You decided to track every instrument for this record, how difficult was it for you with these modern life schedules, how is you writing process in general? And how do you feel knowing that you recorded this by yourself?
It depends. The drums were recorded in a rush and under tight times. I was in a one week holiday back home, and recorded the drums there (in Aguascalientes). It was just one week to do all the drums perfectly, and then bring back the tapes to Mexico City. Besides that, the whole process was soft. The modern day schedules yeah, were hard to handle eventually (I work from 10 to 9!), but I managed to keep up the whole thing. My writing process depends, it’s very variable. Sometimes I grab the bass guitar and come up with a nice riff, then before bed, I think on a way of structuring it. Sometimes I get a really nice chord progression and even the structure on guitar. Even sometimes, there’s no music at all, just a technical concept in my head on how to perform a song based on simple rules. About recording it myself, it is really pleasant. I had done this before in an album I released on 2011 which is called Gusman (http://gusman.bandcamp.com), but this time, I hadn’t anyone else helping me in the studio with engineering stuff, or microphone placing, or moving the cables, or playing a certain track. I know in a recording process, it is best to record the whole band live, but in this case, I think the process I used gave the album a certain character, very intimate.

6.- where did you take the inspiration for this project and what is the music that influenced you at the moment of conceiving this material?
Everyday experiences, but transposed into a more “philosophical” focus, if we can call it that way. Also I had been reading some papers and books on the politics of parametricism, a little bit on neo-liberalism and social systems theory, and I think the lyrics got heavily influenced in that as well.

7.- About your previous projects, what kind of struggles and difficulties did you have to place them on people’s radar? How can you describe the musical scene in your natal state of Aguascalientes? And how did you survive throughout the years with your experience?
I think the only way is to make things happen, not to wait for them. That’s what I learnt when playing with Bleak Boys. I really struggled with that band, because of that, and because of the band-mates haha, but well, that’s a different story.
Aguascalientes has some interesting bands, I think the musical scene tends to vary a lot. You can find guys doing grunge / shoegaze, and people doing reggae and funk. But simultaneously, gigs get all mixed eventually! I don’t know if this is a good or bad thing, but bands, and good bands, yes there are a few. I find very exciting hanging out in town centre on a weekend. You get to go to a few gigs, end up pissed at an after party; it is all very innocent really.
It’s been a rough process, the one of growing up and keeping up with music. Many friends who were very talented musicians got lost in other projects, such as family, kids, work, or even having bands and playing the same stuff as they did 10 years ago. I am not saying this is a bad thing, we are all free to choose what to do with our lives. It’s just a matter of choices and willpower, and having ambition and clear goals.

8.- Previously known as NoLab, you are re-opening your own label, now under the name of El Cochinero. Will you be working on new projects and releasing your music via this label? How is it to start a personal label? Did the name was on your mind long before or does it hit you like a truck in the heat of the moment?
No!Lab was not a label really, it was a project studio I set up for the recording of Gusman, but eventually, bands came in and asked me to record them, so I set it up eventually. El Cochinero is a twofold project: El Cochinero Recording which is currently a recording facility exclusively for overdubs and mixing (I can’t do drums here, my neighbours will kill me!); and El Cochinero Records, which is actually a very very young “record label” project. I am currently trying to release and manage my music myself, and El Cochinero Records is a way of doing this. Eventually, I want to properly set up a very small record label, where I can help independent artists to release their music digitally and even in vinyl format as well, but I don’t have a concise plan for this now, I am just releasing my music via this platform, and I think it is important to set a precedent for these plans. The name was given by my mum, she says my place is a real mess (un cochinero, a place where pigs live), so the name stuck.



9.- Which will be your next release and  what are your words for people out there? The people who supported you from the beginning and the new listeners?
I will release a new single in October, there’s no official date yet, due to the next news: Maschinelles Lernen will be released in vinyl in the US via Ongakubaka Records! Their release times may be different to ours, especially due to the vinyl pressing times, so, this might vary. They will make 150 copies for a beginning and we’ll see how it goes over there, this is really exciting for me. Also I am trying now to set up a band to play the album live, and maybe do a few shows here in Mexico City, and the country; and why not, eventually a few gigs in the States, we’ll see. I would really like to thank everyone out there who has been supporting my music throughout my career, but mainly for this project; friends, family, supporters all around. I would like to thank as well to all the people who is no longer around… (dead and not dead). Very special thanks to my girlfriend, who has been crucial in the whole recording process of this album; very special thanks to my parents for all their help, support and trust. And also, very special thanks to yourself, Petit Mexicain! It’s always great to be here!

A Trip To Tlaxcala 

Food, architecture and a great breakfast. 

Hallo, my beloved friends, today i have a very special post for you and it's because a few days we've been invited to travel to an iconic place of Mexico, the city and surrounding laces of Tlaxcala, but we did it to eat one of the finest treasures of the country, the chiles en nogada and we found a place where breakfast has another meaning. 

Our first stop was in Tlaxcala's downtown were we decided to have breakfast, we walked just two blocks from the parking lot and we found a place called Casa Uno Uno, we got in and the inside was amazing, a place with rock, wood, rustic decoration and the most fine furniture. While reading the menu we decided to take the breakfast number 1, it included juice, mixed fruit with yogurt on top, a cup of tea, coffee or atole, this atole was champurrado a chocolate/corn brew and also its variant without choco but blue corn and as strong meal chilaqules with chicken and enchiladas. 



Casa Uno Uno is located in Av. Juarez number 11 near the main square, is not also a place to eat breakfast, but also where traditional food can be found or just a few drinks with your mates, the place is quiet and comfortable and also the food will worth the way from city to Tlaxcala, it offers season food and sweet bread from french tradition (cuz sweet bread is a french tradition in mexico).

The champurrado

After this feast and lovely ambient we decided to visit the convent, which is in the top of a hill a few steps from the Xicohtencatl square, this square is also the place were merchandise can be bought, many kind of merchandise since typical clothes to hand crafts and also regional fruit or bread. Is also the home of Xicohtencatl, the lord from Tlaxcala in a sculpture.

Also, it's a plce where restaurants are gathered to offer vast and wide food and drinks selections, one of the most popular drink, the pulque in its different "cured" versions.

So up on the hill you will find more interesting merchandise sold by the town's people and also hand crafted, but one of the best things from this hill is the view, the convent and its gate, a colonial architecture can be seen here and around town, the top of the convent is form a Mos-Arabian style, very popular among Spanish colonies.

And after visiting this convent, a religious building still, we hit the road to Apizaco to eat a well-known delicacy of the season, the popular chiles en nogada and to explain what is a chile en nogada let me tell you that: is the most popular way to celebrate mexico's gastronomy in just one meal.

First of all you have an iconic element, the pepper, known as chile, big sized pepper, stuffed with a sweet ground meat stew called picadillo, the nogada is a or kind of sauce made out of castillan nuts and cream, it has to be sweet to contrast the not so spicy flavour of the chile, but we need to add colour, the pomegranate is the right fruit to give the meal some color, even so you are recreating the Mexican flag with this. As final trick people often add some parsley. 

We ate two versions of this chile, one deep fried on egg and the other in its natural state.

Among the differences both versions are tasty and it pleases the most demanding clients, but we were invited as friends and that's what it takes, a good, fresh and tasty meal to gather people around tables, not only in restaurants, also at home.
